Broiled Salmon with Herb-Mustard Glaze

Quick, simple, healthy, and delicious......a few of my favorite things! You will get all of those and more in this beautiful salmon dish! I used fresh thyme, rosemary, and dill from my herb garden, along with Dijon and whole grain mustard and a little white wine to make this simple glaze. This was done in ten minutes! It was melt in your mouth good!

Here's what you need ( to serve 4)

4 6-8 oz salmon fillets

salt and pepper to taste

2 garlic cloves

3/4 t fresh thyme leaves,

3/4 t fresh rosemary leaves

1/2 t fresh dill ( and extra to garnish)

1 T dry white wine

1 T Extra Virgin olive oil

2 T Dijon mustard

1 T whole grain mustard

Lemon or lime wedges to serve

Preheat broiler to high. In a food processor, place the garlic, the herbs, wine, olive oil, and mustard. Pulse until it is combined, about 30 seconds. Now line a baking sheet with foil and spray the foil with cooking spray. Place the salmon fillets on the foil and season with salt and pepper. Place under the broiler for 2 minutes. Remove from oven and top each fillet with the mustard mixture. Broil an additional 5 minutes or until the salmon is golden and it is cooked through, Serve with extra fresh dill if you would like and lemon or lime wedges. Delish!!
