Instant Pot Honey Teriyaki Chicken


I love it when I can say Winner Winner Chicken Dinner! This truly was a winner in every way! So delicious and flavorful, but also one of those recipes where you can just put all the ingredients in the Instant Pot and push a button! I used boneless, skinless chicken thighs, which I recommend. However, you can use chicken breasts if you want. My boys loved this!


Here’s what you need: (4-6 servings)

10-12 boneless, skinless chicken thighs OR 4-6 boneless, skinless chicken breasts

1 cup lower sodium soy sauce

2/3 cup honey

2 t minced garlic

1/2 t minced ginger

1/2 cup rice vinegar

1/4 - 1/2 t crushed red pepper flakes (depends on your taste)

1/2 cup water

3 T corn starch, and 3 T water

* Garnishes; 2 green onions, sliced, toasted sesame seeds.


Riced cauliflower or brown or jasmine rice to serve it with


Place the chicken in the Instant Pot. Mix the soy sauce, honey, garlic, ginger, water, and red pepper flakes together in a bowl. Pour this mixture over the chicken and set the Instant Pot to pressure cook, and set time for 30 minutes. When it’s done, release the pressure. Remove the chicken and shred it apart with two forks. Add the cornstarch that’s been mixed with 3 T water into the sauce in the Instant Pot. Stir to thicken and stir the shredded chicken back into the thickened sauce. Serve over rice and top with the green onions and sesame seeds. Enjoy!

You can substitute apple cider vinegar for the rice vinegar. Hope you enjoy it!

What can be substituted for the rice vinegar? I’ve never bought that and my husband is allergic to rice for some weird reason.
