No-Crust Low Carb Quiche


Perfect for the weekend and perfect if you’re watching your carbs! This was yummy! Bacon, shallots and cheese make this quite a treat!

Here’s what you need:

1 T olive oil

3 slices bacon, chopped

1 medium shallot, thinly sliced

6 large eggs

1/4 cup milk

1/4 t salt

1/8 t black pepper

1 cup shredded Gruyere cheese ( you may substitute Swiss)

Fresh chives, chopped for garnish


Preheat oven to 375. Heat the oil in an oven-proof, 8-inch skillet on medium heat. Add the bacon and shallots. Cook about 5 minutes or so, stirring occasionally. Drain off excess fat. In a bowl, whisk the eggs, milk, salt and pepper together. Stir in the cheese. Add this mixture to the skillet and cook about three minutes on medium heat stirring occasionally. Transfer the skillet to the oven and cook for 8 minutes, or until the top is set. Sprinkle with the chives to serve. Enjoy!
