Peach Salsa



Salsa made with in-season, juicy, ripe peaches.....mmm, now that's just peachy! I posted this recipe earlier back in the summer with my Grilled Chicken and Peach Salsa recipe, but I made it again the other day and I thought it was so good, it was worth sharing one more time. You can get fresh peaches right now, so it's a great time to try it! It is really delicious served on grilled chicken or fish. However, I could sit down and eat the entire bowl all by itself!

Here's all you need:

2 ripe peaches, peeled and cut into a small dice

1/2 mango, chopped, but it is optional

1/2 jalapeno, seeded and minced

3 T red onion, minced

Juice of one lime

1/4 cup chopped fresh cilantro

1/2 red bell pepper, chopped

Stir all ingredients together and allow to sit at room temperature for at least thirty minutes to an hour before serving, and stir it occasionally. There ya go! Enjoy!
