It is finally feeling a little like fall here in Kentucky! Who knows, tomorrow it may be back to 95 degrees, but today....it feels like fall! So it's a great day to whip up this delicious, colorful, flavorful pot of Stuffed Pepper Soup! My new friend, who is also one of my college instructors, Robin Walker, shared this recipe with me and I made it today. I have to tell you...It is so easy and so delicious, you have to try it! Think of a de-constructed stuffed pepper made into a soup! This soup is rich and hearty and tastes just like a stuffed pepper, and I love stuffed peppers! My Mom made them a lot when I was growing up and this soup has that same great homemade yumminess you expect from a stuffed pepper! Happy Fall Y'all!
Here is what you need:
1 lb ground chuck ( You can substitute ground turkey)
1 onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 can diced tomatoes
1 can tomato soup or tomato sauce
2 cups COOKED rice ( brown rice)
1 can chicken broth
1 T sugar
1 t garlic powder
salt and pepper to taste
cheddar cheese, grated, to garnish
sour cream to garnish (optional)
green onion, or chives, to garnish (optional)
Brown and crumble the ground beef, along with the onion and peppers. Cook until done. Drain off any excess fat. Add all other ingredients (please note that the rice is already cooked when you add it in). Simmer and serve! Top with garnishes. Enjoy!
