Mojo Marinated and Grilled Flank Steak



This flank steak was marinated in a Cuban Mojo sauce, which is a yummy garlicky and savory sauce made with orange and lime juice, garlic, cumin and oregano. I grilled it and continued to baste it with the sauce and it was juicy and full of flavor! You can substitute flat iron steak or skirt steak for the flank steak as well. It hardly takes anytime to grill. Let it rest a few minutes and it is good to go!

Here's what you need:

2 lbs flank, flat iron, or skirt steak

Juice of two oranges

Juice of 3 limes

1/2 t oregano

1/2 t cumin

3 T chopped flat leaf parsley

1 finely chopped jalapeno

1 t salt (or to taste)

1/2 t pepper

4 crushed garlic cloves

1/4 cup olive oil

Lay the steak in a shallow dish. Mix all of the other ingredients in a bowl. I pulsed it a few times in the food processor. Pour the mixture on and under the steak. Cover and refrigerate to marinate for anywhere from 2-3 hours up to a full day. Before grilling, let it come to room temperature in the marinade. Get the grill hot and grill the steak 4-5 minutes per side, or until it reaches an internal temperature of 130 to 135, or medium rare. ( Cook a little longer if you like it more medium). Baste the steak while you grill it with the marinade. When it is done, let the steak rest covered loosely with foil. Slice thinly to serve. Serve with lime wedges. Enjoy!
