Nothing's quite like a juicy filet right off the grill, but this easy sauce made with mushrooms and blue cheese makes it even better! I marinated the filet in a little soy sauce and red wine, grilled it and made this yummy sauce. It was so simple, but so delicious! You can grill any kind of steak you like with this sauce. If you aren't a blue cheese fan, you can substitute Gorgonzola or even a sharp cheddar. But I happen to be a huge fan of blue cheese! I served this with some sauteed asparagus and it went together perfectly.
Here's what you need:
2 steaks of your choice
1/4 cup dry red wine
2 T lower sodium soy sauce
salt and pepper to taste
1 T butter
8 oz mushrooms, sliced
1/4 cup beef broth
3 oz blue cheese, crumbled
Fresh parsley to garnish (optional)
Mix the wine and soy sauce together in a shallow dish and place steaks in the mixture. Turn to coat both sides. Allow the steaks to marinate and sit at room temperature about 30 minutes. Preheat the grill and grill the steaks to your taste. In a skillet, heat the tablespoon of butter until melted and add mushroom slices. Saute the mushrooms, adding a pinch of salt, until browned. Add the beef broth and allow to cook down until almost all the liquid has evaporated. Stir in about 2 oz of the blue cheese until melted. When the steaks are done, top them with the mushroom sauce. Sprinkle them with the remaining blue cheese crumbles. Top with parsley if you want. Enjoy!
