Beef Fiesta Bowl


Do you want an easy dinner idea that everyone will love? Today is your lucky day! This Beef Fiesta Bowl is perfect for a weeknight meal or anytime really! I sauteed lean ground beef with peppers, onions, and fresh corn. I seasoned it with taco seasoning and topped it with cheese, pico de gallo, avocado, and cilantro. You can top yours with whatever toppings you would like. I put a little brown rice as a base for my bowl, but it is optional.

This is a quick, easy and healthy meal idea that I hope you make soon!


Here's what you need: (4 bowls)


1 lb lean ground beef or ground turkey

1 package lower sodium taco seasoning

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

Fresh corn kernels from 3-4 ears of corn

1/2 cup, or so, of shredded cheddar or mexican style cheese

Optional garnishes: Sour cream, avocado slices, pico de gallo, cilantro, or jalapeno slices.

Brown rice to serve it on, also optional


Simply heat a large saute pan or skillet and saute the ground beef along with the peppers, onions and corn. Drain off any fat and liquid, Add the taco seasoning and stir to season it all. If you are serving it on rice, place rice in each bowl. Top with the meat mixture. Sprinkle each bowl equally with cheese. Top with any garnishes you would like such as sour cream, pico, cilantro avocado, or jalapeno. Enjoy this easy, healthy, and delicious meal! Great idea for meal prepping too for weekday lunches!
