Beef Fiesta Skillet


Mmm mmm!! Good stuff! I love a good one-skillet meal! Perfect for any night of the week! Here’s what you need:


1 T olive oil

1 lb lean ground beef

1 small onion diced

1 t minced garlic

1 red bell pepper diced

1 cup uncooked rice

1 can Rotel, drained

1 can whole kernel corn, drained

1 1/2 cup water

1/4 t cumin

1/4 t chili powder

salt and pepper to taste

1 can black beans, rinsed and drained

1/2 cup grated cheddar cheese

1/2 cup grated monterey jack cheese

1/4 cup chopped cilantro

1 Roma tomato chopped

sour cream for garnish (optional)


Heat the olive oil in a large skillet. Cook the beef along with the diced onion, red bell pepper, and garlic. When the beef is cooked, drained the excess fat. Stir in the rice, Rotel, water, cumin, chili powder, corn and salt and pepper to taste. Bring to a boil then lower to simmer, cover and cook until the rice is cooked; about 15 minutes, stirring occasionally. When the rice is cooked, stir in drained beans and stir to heat. Top with the cheeses and cover to let it melt. Top with chopped tomatoes and cilantro. Yum!
