Blackberry Walnut Salad


My blackberries are in abundance right now and they are so big, plump and sweet! I have just been eating them as a snack and putting them in my yogurt....but I decided to make a delicious summer salad tonight with them and I added walnuts and feta cheese. I made a quick and easy blackberry vinaigrette to drizzle on top. Man, was this good! This salad is a unique and refreshing way to enjoy those beautiful blackberries that are ripe for the pickin' right now!


Here's what you need: ( 4 salads )


4 cups mixed baby greens ( I added arugula)

1/2 cup feta cheese crumbles

1/2 cup walnuts, chopped

1/2 cup to 1 cup blackberries

1/4 cup fresh mint leaves, chopped


Dressing:

1/2 cup blackberries

2 T olive oil

1 T balsamic vinegar

2 t honey


Assemble the salads by placing the greens in bowls, and top with the blackberries, feta, walnuts, and mint. Place the ingredients for the dressing in a food processor or blender and process until smooth. Drizzle the dressing evenly over the salads. YUM!
