Easy Shepherd's Pie


The ultimate in comfort food and so easy to make! This classic dish is traditionally made with lamb, but I made this with lean ground beef. You can certainly use ground lamb if you like, but this version was amazingly delicious! You only need some basic ingredients and when you put them altogether, you get a healthy, yummy meal the whole family will love!


Here's what you need:

1 lb. lean ground beef

2 t olive oil

1 1/2 cups baby carrots, sliced

1 package Lipton dry onion soup mix

2 t dried parsley (optional)

1 T Worcestershire sauce

1 T flour

1 can baby green peas

1 small can whole kernel corn, drained ( about 1/2 cup...this ingredient is optional)

3 cups prepared mashed potatoes

1/4 t paprika


Preheat the oven to 400. Prepare the mashed potatoes and set aside. In a large pan or skillet, add the oil. Saute the sliced baby carrots for a few minutes on medium-high heat until they are getting soft. Add the package of onion soup mix and dried parsley. Stir, then add the ground beef. Stir and cook until the beef is cooked through. Drain off any fat. Add the Worcestershire sauce and the flour. On low heat, stir this to combine. Stir in the drained peas and corn. Pour this mixture in a 9x9 or oval casserole dish. Carefully spread the mashed potatoes on top and sprinkle the paprika on evenly. Bake uncovered at 400 for 12-15 minutes, then broil for 1-2 minutes to brown the top of the potatoes. (Don't walk off during the broiling process. the potatoes can brown quickly!) Allow to sit a couple of minutes then serve it up! Enjoy!
