Fresh Melon Salad


If you want a light, sweet and refreshing salad ( or dessert ), this is it! This simple, but delicious salad is perfect now, when the cantaloupe and watermelon are in-season and so sweet! It is basically a mix of chunks of fresh melon, prosciutto, feta cheese, fresh basil and a drizzle of olive oil. The sweet melon mixed with the saltiness of the prosciutto and feta is an unexpected combination made in heaven! This is easy, but very unique and tasty!


Here's what you need: ( 1 large or two small salads)


1 cup fresh cantaloupe cut into 1 inch cubes

1 cup fresh watermelon cut into 1 inch cubes

1 slice of prosciutto, heated until almost crispy in a skillet, and torn into pieces

1/4 cup feta cheese crumbles

3-4 fresh basil leaves, sliced

a drizzle of Extra Virgin olive oil

Optional: A bed of baby greens, or arugula as a base for the salad


Mix together the melon, prosciutto, and feta. Drizzle with a little olive oil. Top with the fresh basil. You can serve this on a small bed of baby greens or baby arugula if you like. Enjoy!
