Light and Refreshing Watermelon Salad


A sweet watermelon is such a delicious summertime treat! I could eat it every day! This is a light and unique way to spotlight it as a salad on its own, or a delicious side dish! The sweet melon and salty feta are a match made in heaven!

Here‘s what you need:

3 cups watermelon, cut into 1/2 inch cubes

1 T olive oil

1T white wine vinegar

1/4 t black pepper

2/3 cup crumbled feta cheese

1 medium shallot, extremely thinly sliced

Optional: fresh basil, sliced to garnish or a handful or two of fresh baby spinach.


In a large bowl, whisk together the olive oil, vinegar and pepper. Add the watermelon, shallot, and feta. Toss. Allow to sit at room temperature for 5-10 minutes. Stir in the fresh basil or fresh baby spinach and serve.
