Oh yum! Warm up with this delicious, creamy and cheesy vegetable soup! Perfect for a fall night!
This is what you need:
1 T olive oil
1/2 cup diced carrots
1/2 cup diced celery
1 small onion, diced
2 t minced garlic
1/2 t salt
1/4 t pepper
2 cups peeled and diced potatoes
3 cups broccoli florets
4 cups chicken broth
1/2 cup heavy cream ( or whole milk)
1 1/2 cup Colby jack cheese, grated
sliced green onion for garnish
Sauté the carrots, celery and onion in a soup pan in the olive oil. Sauté until softened. Add the garlic and sauté a minute more. Add in the salt, pepper, potatoes, broccoli, and broth. Bring to a boil then lower heat and simmer until the vegetables are soft. Stir in the cream and cheese. Stir to melt. Remove one cup of the soup and blend until smooth in a food processor or blender. Add this mixture back into soup to thicken. Serve with sliced green onion for garnish if you like!
