Low Carb Skillet Lasagna


Yum!! Have you been craving lasagna but you’re trying to cut back on carbs? This is your lucky day! This lasagna is made without noodles in a oven-safe skillet and it is delicious! This hit the spot and my boys approved!

Here’s what you need:


Meat layer:

1 t olive oil

1/4 cup red onion, diced

1/2 t minced garlic

1 lb lean ground beef

1/2 cup marinara sauce

1/2 t salt or to taste

1/4 t black pepper


Cheese layer:

8 oz ricotta cheese

1 cup mozzarella cheese. shredded

1/2 cup grated Parmesan

2 eggs, beaten

1 t Italian seasoning

1/2 t garlic powder

1/4 t black pepper


Heat oven to 350. In oven safe skillet, heat the oil. Sauté the onion and garlic until onion is soft. Add the beef and cook until done. Drain fat. Stir in marinara sauce, salt and pepper. Allow to simmer on low while you make the cheese layer. For the cheese layer mix all ingredients together except 1/2 cup of the mozzarella. Spread this cheese mixture over the beef mixture. Sprinkle the remaining mozzarella on top and bake in oven for 10 minutes. Broil for 2 minutes or until the cheese is slightly browned. Allow lasagna to rest for 10 minutes before serving. Enjoy!
