Mexican Grilled and Stuffed Peppers


Try this Mexican take on stuffed peppers! They were delicious! I grilled the bell peppers for five minutes on each side and stuffed them with an easy mixture of lean ground beef, salsa, onion and a few spices. I topped it with cheese and there they are! Wonderful!


Here‘s what you need :

2 lb lean ground beef

1 small onion, finely chopped

Salt to taste

1 T chili powder

1 t cumin

1/4 t cayenne pepper

1 15 oz jar salsa ( mild, medium, or hot)

8 bell peppers ( green, red, or yellow)

1 cup Mexican blend cheese, shredded

Fresh cilantro to garnish


Cut the tops off of the peppers and remove the seeds. Set these aside.

In a large skillet, place the ground beef and the chopped onion. Sauté on medium-high heat until the meat is cooked through. Drain off any fat. Salt to taste then add the chili powder, cumin, cayenne, and the salsa. Stir well and allow to simmer on low.


Meanwhile, preheat the grill to high heat. Place the peppers on the grill with the cut end up. Grill five minutes and flip them

upside down. Grill them five more minutes and remove them carefully with tongs and place on a baking sheet or long casserole dish cut side up.


Preheat the oven to 400. Lightly salt the inside of each pepper. Fill each pepper with the meat mixture all the way to the top. Top evenly with the cheese and bake for 5 minutes or until the cheese is melted. Dig in!!
