Steak Fajita Bowl

Yum! Tender, perfectly seasoned steak with peppers, onions, lime and cilantro! Served with rice instead of a tortilla. This made a wonderful meal that took very little time to create. Everyone loved it!
Here’s what you need: (serves 4-6)
1 1/2 to 2 lbs flank steak (or flatiron steak)
1 T and 1 t of olive oil
1 large onion sliced
2 green bell peppers sliced
cilantro, lime wedges, mexican style cheese, and sour cream to garnish.
Rice or cauliflower rice to serve
Seasoning mix:
1 t each of cumin, salt, chili powder, paprika and garlic powder
Mix the seasoning mix together in a small bowl. In a skillet, heat up the T of oil and sauté the peppers and onion. Stir in 2 t of the seasoning mix. Keep this warm.
Preheat your grill to high. Rub the t of olive oil on the flank steak and sprinkle the remaining seasoning mix on both sides. Grill for 5 minutes per side. ( This is for medium ). Grill more if you want your steak more done. Remove the steak from the grill and let it rest a few minutes. Slice super thin across the grain.
To assemble the bowls, place rice, then peppers and onions, top with steak and add any of the garnishes you like! Enjoy!
