Tomato, Grilled Corn and Avocado Salad


This salad is most definitely summer on a plate! Fresh tomatoes, grilled sweet corn, ripe avocado topped with a little bacon and a fresh homemade dressing! Take your summer veggies to a whole new level with this!

Here’s what you need:

2-3 large tomatoes, sliced into 1/4-1/2 inch slices

2 ears of corn, grilled, and kernels cut off

1 ripe avocado, thinly sliced

2 slices of bacon, cooked and crumbled

Dressing:

1/4 cup low-fat buttermilk

1 T chopped fresh basil

1 T chopped fresh chives

2 T light mayonnaise OR plain Greek yogurt

1/4 t minced garlic

2 t apple cider vinegar

pinch of salt , dash of black pepper


Heat the grill to high heat. Spray the corn with cooking spray. Grill about 8 minutes, turning occasionally until it has good marks. Remove and cool, then cut off kernels. Mix all dressing ingredients together with a whisk and set aside. To assemble, you can create individual salads for each person or place it all on a serving platter... First arrange the tomato slices, lightly salt, add avocado slices, sprinkle the corn kernels on, drizzle on the dressing and top with bacon crumbles. Add a little cracked black pepper, and fresh basil to garnish if you like. Enjoy!
