Wake Up Call!


Your Mom always said breakfast is the most important meal...well, I believe she is right. Breakfast fuels you for the morning, and can set the tone for the day. Unfortunately, breakfast gets skipped a lot. Research actually shows that people who eat breakfast tend to weigh less than people who skip it.. Mornings are rushed as we head to work or school. It may be tempting to skip breakfast or grab something that is laden with sugar or unhealthy fat. I want to share my go-to, savory garden veggie omelette...it is super easy and you can add whatever fillings you want. I choose veggies, well because I love them! Veggies are our friends if we want to eat clean and healthy. I get up early and head to the gym in the morning, and I look forward to coming home and diving into one of these after my workout!


I literally can make this in minutes and I can customize it for which family member I make it for.

You will need:

2 eggs

1 Tablespoon milk

salt and pepper to taste

2 teaspoons butter ( I use nonstick cooking spray)

veggies of choice..I use;

1 small tomato sliced or diced

1/2 cup sliced mushrooms

1 cup fresh baby spinach

1/2 cup diced peppers

1/4 cup shredded mozzarella

In a small bowl, whisk the eggs, milk, salt and pepper together. In a saute pan, saute the veggies until cooked to desired doneness. Remove the veggies, and rinse out the pan. Add the butter or spray with cooking spray and put on medium-high heat.. Add the egg mixture to the pan. After about 30 seconds, tilt the pan and allow the egg mixture to fill in all around the edges. Repeat for two to three minutes or until the egg is cooked through. Sprinkle half of the veggies or other fillings, over half the omelette. Fold the other half over the top. Sprinkle with the remaining fillings and the cheese. Serve immediately!

This is a quick and easy breakfast that is super filling and healthy. You can even have your veggies chopped or diced the night before for an even quicker prep time!
