Instant Pot Beef Stew

It is under 70 degrees here, so I decided I wanted to dust off the Instant Pot and make some Beef Stew! I love the Instant Pot because what used to take a long time, now takes under an hour and it was amazing! This recipe is super simple and you probably have almost everything you need to make it already at home. This stew turned out rich and hearty and very flavorful!

Here's what you need:

2 lb. beef stew meat, trimmed and cut in bite-sized pieces

8 (or so) potatoes, peeled and cubed

5-6 large carrots, peeled and sliced (not too thin)

1 onion, peeled and chopped

1 T vegetable oil

3 t cornstarch

2 beef bouillon cubes

2 cups water

1 can tomato sauce

1 small can tomato paste

1 dash (or so) hot sauce

salt and pepper to taste

Fresh parsley torn to garnish

Prepare all your ingredients. Set the Instant Pot on Saute Mode. Add the oil ad heat it up. Add the beef and the onion. Stir until the meat is browned on all sides. Add the carrots, water, and boullion cubes. Stir, cover, and cook on Soup Mode for 20 minutes. While that is cooking, bring salted water to boil on the stove and cook the potatoes for 10 minutes and drain them. When the 20 minutes is up, release the pressure on the Instant Pot. Uncover it and set it on Saute Mode again. Add the cornstarch that has been mixed with a little water, tomato sauce and tomato paste. Stir well to mix in the cornstarch and tomato paste. Stir in the potatoes. Turn heat off. Salt and pepper to taste and add the dash of hot sauce. Allow to sit for a few minutes for flavors to meld. Add a little fresh parsley leaves to the pot. It is ready to serve!
