This was prepared so quickly and it turned out so perfect, you need to try it! I served this with the zucchini noodles, but you can always just use whatever pasta you would like. However, the zucchini noodles are so yummy and healthy and a great substitute for pasta...plus I love spiralizing the zucchini right into the pan and giving it a quick saute, and it's ready to go!
You will need to serve 2:
1 pound of large shrimp, peeled and deveined
2 T butter
1/2 chicken broth
1/4 heavy cream
1 large tomato, peeled and diced small ( or you can use 1 can petite diced tomatoes, drained)
1-2 garlic cloves minced
1 T lemon juice
fresh parmesan (about 1/4 cup)
salt and pepper to taste
1 large zucchini
1 T or so olive oil
Fresh basil to garnish
Cracked red pepper flakes to garnish (optional)
Prepare the zucchini noodles:
I spiralize the zucchini right into the saute pan. Toss with some of the olive oil to coat. Salt and pepper to taste. Saute over medium high heat until the tenderness you like. Drain off any liquid and set aside and keep warm.
For the shrimp:
In a large skillet or saute pan, melt the butter. Add the shrimp. Saute a minute or two till pink.. Remove the shrimp and keep warm. In the same skillet, saute the garlic till slightly browned. Add the tomatoes and saute a minute or so. Add the broth and allow to reduce a little. Slowly add the cream and allow to reduce until it is thickened. Add the lemon juice and salt and pepper to taste. Add the shrimp back into the sauce. Serve the sauce over or with the zucchini noodles and garnish with the fresh parm and the basil leaves and red pepper flakes if you like a little heat. Enjoy!
