Honey Lemon Chicken

I love a delicious, homemade meal that I can make in less than 30 minutes with just a handful of ingredients! Quick, easy, healthy.....BOOM! This was so scrumptious and all made in one skillet and literally took less than 30 minutes! I also love cooking with chicken thighs too. They are always juicy and tender, and are easy on the budget! You can't really go wrong with them! I used boneless, skinless chicken thighs and they get browned in the skillet and then they simmer in an easy sauce that you can whip up with ingredients I bet you already have at home. The chicken releases its own juices into the sauce, and then you baste the chicken with it right before serving,leaving a delicious glaze on it! YUM!

Here's all you need:

6-8 boneless, skinless chicken thighs

2 T olive oil

4 T lemon juice (fresh squeezed is best)

3 T honey

1 T soy sauce

1/2 t salt

2 green onions, or chives chopped to garnish

1 lemon sliced

In a small bowl mix the lemon juice, honey, and soy sauce. Heat the oil in a large skillet (cast iron is great), and salt both sides of the chicken. Place the chicken in the hot oil and let it cook on medium-high heat for 5 minutes, or until it nicely browned on the first side before turning. Be sure it is browned well and not just a little bit brown. (It looks prettier). Turn the chicken and slowly pour the lemon mixture over the chicken and into the skillet. Reduce the heat to low and cover the skillet. Let it cook for 20 minutes (at the last 5 minutes place the lemon slices around the chicken and re-cover and cook the last 5 minutes). Baste the chicken with the glazing sauce uncovered until it is slightly thickened and sprinkle the green onions on top to garnish. Serve with your choice of sides. Enjoy!!
