Dijon Bacon Brussels Sprouts

These Brussels sprouts are just so good! I make these at least once a week I love them so much! This is so simple, but so delicious! This is a perfect side dish for your Thanksgiving dinner! Flavored with a little dijon mustard and bacon...how can it not be good! I saute these and they cook up fast, and it requires very little ingredients. If you haven't had fresh brussels sprouts cooked this way, it's time to give it a try!

Here's all you need:

24-32 oz fresh brussels sprouts, halved lengthwise

1 1/2 T olive oil

1 T dijon mustard

2 slices bacon

1/4 cup chicken broth

salt and pepper to taste

Combine the brussels sprouts, dijon mustard and salt and pepper to your taste in a bowl, stirring to coat evenly. Heat the olive oil in a large skillet. Saute the brussels sprouts over medium high heat, stirring occasionally, allowing them to brown slightly. In the mean time, cook the two pieces of bacon in the microwave. Transfer the bacon to a paper towel to cool, but reserving about 2 teaspoons of the drippings. Stir the drippings into the brussels sprouts as they are cooking. Add the chicken broth. Continue to cook until they are tender but not mushy. Crumble the bacon and add to the brussels sprouts and adjust salt and pepper if necessary. They are ready to serve!
