Garlic Parmesan Roasted Potatoes


I made these tonight as a side dish for dinner and they were definitely blog worthy! Easy and delicious! You’ll love them!

Here’s what you need:

2 lb petite gourmet potatoes or fingerling potatoes, halved

2 T olive oil

salt and pepper to taste

1 t minced garlic

zest of one lemon

1/4 cup grated Parmesan

2 T melted butter

chopped fresh parsley to garnish


Preheat the oven to 425. Place potatoes in a large mixing bowl. Stir in the olive oil to coat them well. Add in all the other ingredients except the parsley. Stir well. Spread them evenly onto a baking sheet. Bake for 15-20 minutes or until tender and golden brown . I stirred mine once during cooking time. Garnish with the chopped fresh parsley to serve.
