It is not a Thanksgiving side, but I just had to share this recipe I whipped up tonight. I used what I had on hand and created this delicious easy and healthy dinner in less than 30 minutes. I stir fried chicken breasts, added some veggies and finished with a super simple sauce made with fresh orange juice. It was just so good and you probably have everything you need at home to make this too!
Here's what you need:
4 chicken breasts cut up in bite sized pieces
1 red bell pepper cut up
1 green pepper cut up
1 head broccoli cut up in florets
1 small onion cut up
2 garlic cloves minced
1 T olive oil
For the sauce:
1/2 cup chicken broth
2 T honey
juice from two oranges
1 T cornstarch
Garnish: (optional)
orange slices
sliced almonds
Heat 1/2 T oil in a large skillet. Add the chicken. Stir fry till no longer pink. Add the garlic and onion and stir a minute or two. Add the rest of the veggies and stir fry about 4 minutes more till crisp tender. Whisk the ingredients for the sauce together. Pour over the chicken and veggies. Stir a minute or so till thickened.. This is so yummy! Enjoy!
