Ok.. we're going old school today! This is something I grew up enjoying as a kid and now I can make it quickly in the Instant Pot! This hearty swiss steak is the perfect meal for a cold winter night! It is so easy to make and a real family friendly dish! Swiss steak is so economical too, because it is traditionally made with a cheaper cut of meat, like round steak. This recipe for the Instant Pot is perfect because it tenderizes it so well! This was so incredibly tender, no need for a knife! Add this to your menu this winter! This can be be served with rice, noodles, baked potatoes, or mashed potatoes.
Here's what you need:
2 pounds top round or bottom round steak, trimmed and cut into large squares
2 t garlic powder
1 t salt
1 t black pepper
2 T corn starch
2 T vegetable oil
1 onion diced
2 green bell peppers diced
1 cup beef broth
1 15 oz. can crushed tomatoes
Season the sliced steak with the salt, pepper and garlic powder. Lightly dredge both sides of the meat with the cornstarch.
Set the Instant Pot to saute mode. Add the oil. Working in batches, brown both sides of the pieces of steak and remove them from the Instant Pot and place on a plate and keep warm. When the steak is all browned, put the diced onions and peppers in the Instant Pot and saute until they are getting soft. Add half of the beef broth and stir to get the browned bits off of the bottom. Hit cancel. Add the round steak back in the pot. Pour the rest of the broth over the steak, Add the crushed tomatoes. Do not stir.
Place the lid on the pot and turn valve to sealing. Hit the Pressure Cook button and set it to 30 minutes. When it is done, release the pressure. When the pin drops, remove the lid. It is ready to serve! You may need to salt and pepper it a little more to your taste. If you want a thicker gravy, you can mix 1 T cornstarch and 1 T water together and stir into the gravy after removing the steak, but I just served it just like it was! It was so good and very tender!
