Instant Pot Korean Beef Short Ribs

Get ready for a treat! Meaty beef short ribs, fork tender with a delicious sauce of soy, sesame and ginger! They are fall-off-the-bone amazing! This is a must for your Instant Pot! You can also make this in the oven, but the Instant Pot speeds up the process and it is done in about an hour from start to finish. As a side note, your house will smell like heaven when you cook these! The sauce you make with the ribs is also perfect for chicken, meatballs, or steak.

Here's what you need:

5 lbs beef short ribs

1 cup lower sodium soy sauce

1 cup light brown sugar

4 T sesame oil

4 T rice vinegar

4 T minced fresh ginger

1 clove garlic minced

1 t red pepper flakes

1-2 green onions sliced for garnish

1/4 cup cornstarch to thicken after cooking

Place the ribs in the Instant Pot standing upright. In a bowl, mix all the rest of the ingredients except the green onions and cornstarch. Pour this over the ribs.. Close the Instant Pot and set it on Pressure for 50 minutes. When it is done, allow the pressure to release naturally for about 10 minutes then finish releasing the pressure manually. Open the Instant Pot when the pin drops. Carefully remove the ribs with tongs and place in a long baking dish. While the sauce is hot in the Instant Pot, add the cornstarch that has been mixed with about 3 T of water and stir to thicken. Pour this over the ribs and garnish with the green onions. Serve with mashed potatoes, rice, grits or polenta. Awesomeness!
