Grilled Chicken Fajita Quesadillas

If you love chicken fajitas and you love quesadillas, you'll love this because you get both! Perfectly seasoned chicken, off the grill, along with sliced and sauteed colorful peppers and onions on a toasty tortilla! This should become one of your new favorite weeknight dinners,or a fun weekend treat! This is so simple and fast. I made my own fajita seasoning that took me all of 5 minutes and I highly recommend you do the same because you probably already have the simple ingredients in your kitchen. I seasoned the chicken and the veggies with the same seasoning and it was fantastic!

Here's what you need: (to serve 4)

1 t chili powder

1 t paprika

1 t garlic powder

1 t cumin

1 t salt

1/2 t oregano

1/4 t black pepper

3-4 boneless, skinless chicken breasts, pounded out to 1/2 inch thick

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green pepper, sliced

1 onion, sliced

2 T olive oil

4 large whole wheat tortillas

Mexican blend cheese, or Monterey Jack and Cheddar cheese

*Optional garnishes: Sour cream, Guacamole, Salsa

Mix the first 7 ingredients together in a bowl. This is your fajita seasoning. By the way, this is such a great seasoning mix, you can make more and have it on hand for later too because it is really good!

Preheat your grill. Now take your chicken breasts and brush with a little olive oil and sprinkle some of the seasoning on both sides. Grill till done...Do not over cook them. Nobody likes dry chicken...just saying.

While it is grilling, add a little oil to a skillet and saute the peppers and onions with the rest of the seasoning until they are done.

When the chicken is ready, slice it thinly. Now brush a little oil on one side of the tortillas and lay in a skillet. I used my electric skillet because it had more room. Allow the tortillas to toast on that one side with the oil and sprinkle a blend of cheese on each tortilla. On one half of each tortilla, add some chicken and pepper mixture. Then fold the other half over onto the side with the filling. Remove and slice in two to serve. These are so yummy! Serve with whatever garnishes you would like. Enjoy!
