Grilled Grouper with Mango Salsa



I made my way into Gulf Coast Connection in Lone Oak again today and decided on some fresh grouper! I seasoned and grilled it then topped it with this fresh mango salsa and it was summertime on a plate! I seasoned the grouper with a little salt and a little Old Bay seasoning, which is one of my go-to seasonings for seafood! The slight spice of the seasoning combined with the sweet mango was a delight! You need to give it a try...this salsa is great on any fish as well as chicken.

Here's what you need: (4 servings)

4 Grouper fillets (or any fish you prefer to grill)

Juice of one lime

Salt to taste

Old Bay seasoning to taste

For the salsa:

2 Mangos, peeled and diced

Juice of one lime

1/2 jalapeno,seeded and minced

3 T minced red onion

1/4 cup chopped fresh cilantro

1/2 cup cherry tomatoes, chopped

Salt to taste

Prepare the salsa by mixing all of the salsa ingredients together, salting to taste, and allowing it to sit at room temperature for a while, stirring occasionally. Preheat your grill. Place the fish in a shallow dish and squeeze the juice from one lime on each fillet evenly. Salt to taste. Sprinkle Old Bay seasoning to taste. Place the fish on the grill and season the other side. Grill until it flakes with a fork. Serve the fish with the salsa on top. Yummy!
