Bacon, Spinach and Cheese Egg Bites


These are a delicious way to enjoy a protein-packed, low carb breakfast! Perfect for meal prepping too!

Here’s what you need: (for 6 muffins)

6 eggs

1 T half and half or milk

salt and pepper to taste

handful fresh baby spinach, chopped

2-3 slices bacon, cooked and crumbled

1/3 cup shredded mozzarella

1/8 cup shredded cheddar


Preheat oven to 350. Spray 6 of the cups in a muffin tin with cooking spray. In a bowl, beat the eggs with the half and half and lightly salt and pepper to taste. Pour the egg mixture into 6 of the muffin tin cups, filling to 3/4 full since the egg will puff up when cooking. Add in the rest of the ingredients, evenly, in this order to each cup.... spinach, mozzarella, bacon, and cheddar. Cook for 15-20 minutes or until the egg is done. Enjoy!
