Blueberry, Honey and Oat Bars


I was able to get my hands on some yummy, homegrown blueberries and wanted to make a healthy treat with them. These delicious bars did not disappoint! They are made with all healthy ingredients, so you can feel good about enjoying them! They are great alone, or you could top them with greek yogurt to serve! Yum!

Here’s what you need:

3 ripe bananas

1 egg

1/4 cup honey

2 cups oats

1/4 cup almond flour ( or coconut, or whole wheat flour)

1/2 t cinnamon

1/2 t baking soda

1/4 t salt

1 cup blueberries


Preheat oven to 350. Spray a 8x8 or 9x9 baking dish with cooking spray. In a large bowl, mash the bananas and add the egg and honey. Mix well. Add oats, flour, cinnamon, baking soda, and salt. Mix well. Stir in the blueberries gently. Pour into the baking dish. Bake for about 30 minutes or until they are set. Allow to cool a few minutes before serving. Serve with low-sugar yogurt if you’d like. Enjoy!
