Scrumptious!! I hit a home run with this tonight! This chicken dish is fresh and full
of flavor! Marinated chicken cooked quickly on the Blackstone, topped with fresh tomatoes and slices of mozzarella! I drizzled it with a balsamic glaze and topped with fresh basil! Summer on a plate! You can buy balsamic glaze but making it yourself is really easy!
Here’s what you need:
4 chicken breasts, pounded thin
I cup Italian dressing
1-2 tomatoes, sliced
4-6 slices of mozzarella
Salt to taste
Fresh basil to garnish
Balsamic glaze
**To make your own glaze, mix 1 cup balsamic vinegar with 3 T honey or 1/4 cup brown sugar. . Heat in a saucepan on medium heat to a simmer then lower to medium low heat, stirring often. Allow this to reduce down by half . This will take about ten minutes or so. It will thicken as it cools. You can find premade balsamic glaze at most grocery stores.
Marinate chicken in the Italian dressing in the refrigerator 30 minutes to an hour. Discard marinade. Lightly salt the chicken. Prepare griddle. Cook chicken on medium high heat until it reaches an internal temperature of 165. Transfer chicken to a platter and top with mozzarella slices. Cover with foil to keep warm. Quickly warm the tomatoes on the griddle and add them to the chicken. Drizzle with the balsamic glaze and top with thinly sliced fresh basil leaves . Enjoy!
