Crock Pot Fiesta Chicken


This super-easy Crock Pot Fiesta chicken is so versatile, it will be sure to please the entire family! This savory, tender chicken can be served (at least) three ways..so it's great for the whole family! It is a delicious and satisfying topping for a chicken taco salad, or a great filling for chicken tacos, and even a yummy way to top your nachos! Just toss a few simple ingredients in your slow cooker, and when the family is ready for dinner, this will be ready to enjoy! Top it with your favorite garnishes, such as cheese, avocado, and sour cream and you have a winner winner chicken dinner!


Here's what you need:


4-6 boneless, skinless chicken breasts

1 can black beans, drained

1 can whole kernel corn, drained

1 can RoTel (original)

1 can Rotel (mild)

1 pouch Taco seasoning


Garnishes (all optional but all are great with it!):


Shredded cheddar, Monterey Jack, or Mexican blend cheese

Shredded lettuce

Diced tomatoes

Pico de Gallo

Diced avocado

Sliced jalapeno

Fresh Cilantro

Sour Cream

Picante sauce

Lime wedges


Simply add the uncooked chicken breasts, black beans, corn, cans of Rotel and taco seasoning to the slow cooker. Cook on high for 5 ( or until the chicken can be pulled apart easily with two forks). Serve whichever way you like! Enjoy!
