Crock Pot Greek Chicken


Simple and delicious! You will enjoy this yummy chicken recipe not only because it tastes great, but it’s super easy and you probably have most of the ingredients already! Made in the Crock Pot, it’s a healthy dinner ready to enjoy!

Here’s what you need:

6-8 skinless chicken thighs, boneless or bone-in

2 lb red potatoes cut into chunks

1 onion cut into chunks

1 t garlic powder

1 t dried basil

1 t dried rosemary

2 t dried oregano

salt and pepper to taste

1/2 cup chicken broth

zest of one lemon

juice of one lemon

1 T olive oil


Place the potatoes and onions in the bottom of the slow cooker. Salt and pepper to taste, pour in the broth and sprinkle with half of the garlic powder, basil, rosemary, and oregano. Heat the oil in a large skillet. Salt and pepper each chicken thigh. Brown the chicken about 3-4 minutes on one side. Transfer the chicken, browned side up, on top of the vegetables in the crock pot. Top with the rest of the seasonings. Add the zest and juice of the lemon. Cook on low 5-6 hours or on high 3-4 hours or until chicken reaches 165 internal temperature and very tender. Serve with juice from the slow cooker drizzled on top of each serving and garnish with fresh parsley.
