Crock Pot Orange Glazed Chicken

Sweet and savory! This orange glazed chicken turned out great! Tender chicken in a yummy sauce with natural flavors of orange, ginger, garlic and honey! I used chicken thighs, but you could use chicken breasts too. (I recommend the thighs)

Here's what you need;

3 lb boneless skinless chicken thighs or breasts

1 orange, sliced

1 onion, chopped

1 tsp minced garlic

Sauce:

1/4 cup honey

1/4 cup lower sodium soy sauce

1 T minced ginger

salt and pepper to taste

To thicken;

Juice of one orange

1 T cornstarch

Optional garnishes: Fresh orange slices, and sliced green onion, or crushed red pepper flakes (You can always drizzle a little extra honey on it too!)

Spray the bottom of the crock pot with cooking spray. Lay the orange slices, chopped onion and garlic evenly on the bottom of the crock pot. Lay the chicken pieces on top of that. Mix the ingredients for the sauce together with a whisk and pour it over the chicken. Cook on low 6-7 hours, or until the chicken is very tender but not falling completely apart.

When it has cooked, carefully remove the chicken pieces with tongs and place in a serving dish.Remove the pieces of orange from the sauce. Pour the sauce from the crock pot into a saucepan. Heat it up on the stove. Whisk the fresh orange juice and cornstarch together and stir into the hot sauce. Stir to thicken. Pour the sauce over the chicken. Garnish with green onion, crushed red pepper flakes and fresh orange slices if you would like and serve over brown rice or cauliflower rice. YUMMY!
