Crock Pot Pepper Steak

We enjoyed this delicious pepper steak made in the Crock Pot tonight for dinner a lot! The sauce was spot on!

Here’s what you need:

2 lb sirloin steak cut into 1/2 inch wide strips

1 T olive oil

salt and pepper to taste

1 t garlic powder

1 onion, sliced

2 green bell peppers, sliced

2 red, yellow or orange bell peppers, sliced

1 15 oz can fire roasted tomatoes, with juice

1/4 cup lower sodium soy sauce

2 T Worcestershire sauce

2 T honey

1 t minced ginger

1/4 t red pepper flakes

4 T corn starch, divided

In a large skillet, heat the oil. Season the steak strips with garlic powder, salt and pepper to taste. Sauté until they are brown on all sides. Place the steak in the Crock Pot along with any juices. In the same skillet, sauté the onion slices until softened. Put them in the Crock Pot with the steak. Add the peppers and tomatoes. Mix together the soy sauce, Worcestershire sauce, honey, ginger, red pepper flakes, and 2 T of the cornstarch. Pour this over everything in the Crock Pot. Stir a little and then cook on high for 4-5 hours or until the steak is tender. You can also cook about 7 hours on low. When it’s done, mix the remaining 2 T of cornstarch with 2 T cold water and stir this into the sauce to thicken. Serve with rice and enjoy!
