This is a wonderfully fresh and delicious way to serve your grilled or pan seared chicken! You can whip up this super simple sauce with just a few ingredients to take your chicken to the next level! This will be a great way to use some of your fresh garden veggies!
Here’s what you need:
4-6 grilled or pan seared chicken breasts or cutlets. (I just seasoned mine with salt and pepper)
For the Sauce:
1 T olive oil
10 oz pack of cherry or grape tomatoes, halved
3 large garlic cloves, minced
1/2 cup dry white wine
1 t dried oregano ( or 1 T fresh oregano, minced)
salt and pepper to taste
pinch white sugar
Fresh shredded Parmesan to top
fresh basil leaves torn to garnish
Cook your chicken how you’d like and keep it warm. In a skillet, heat the oil on medium high heat. Add the tomatoes and garlic. Add the wine and allow this to cook down. Cook about 3-5 minutes or until the tomatoes burst and the sauce thickens some. Remove from heat. Stir in the oregano and just a pinch of sugar. This neutralizes the acidity and balances the taste. Add salt and black pepper to taste. Top the warm sauce over the cooked chicken. Add shredded Parmesan and basil to serve. Delicious!
