Sheet Pan Smoked Sausage and Veggies


We all loved this one! Besides it being delicious and healthy, I also loved that you stir everything together and pop it in the oven! A yummy dinner in less than thirty minutes! This also makes a fantastic meal prep idea!

Here’s what you need:

4 cups fresh broccoli florets

2 small or 1 large zucchini cut in chunks

1 small onion cut in chunks

1 cup cherry tomatoes, halved

1 red bell pepper, cut up

(Try to cut all veggies in about the same size pieces for even cooking)

2 T olive oil

1 13 oz pack of cooked turkey smoked sausage

garlic salt and black pepper to taste

parmesan cheese to garnish

Preheat oven to 425. Stir all the ingredients together except the cheese. Spread evenly onto a large sheet pan. Cook for 12 minutes. Stir everything around, then cook for an additional 12 minutes, or until veggies are crisp tender. Serve with or without rice and garnish with grated Parmesan. Enjoy!
