Garlic Parmesan Roasted Squash and Tomatoes


What a yummy way to prepare fresh zucchini, squash and tomatoes! This will be a hit with the whole family! Super easy, super fresh and super delicious!


Here's what you need:

2 yellow squash, cut into 1/4 in. to 1/2 in, thick slices

2 zucchini, cut the same as the squash

1 cup cherry or grape tomatoes, halved

3 T olive oil

4 cloves garlic, minced ( about 1 T)

1 1/4 t Italian seasoning

Salt and pepper to taste

3/4 cup to 1 cup finely shredded Parmesan cheese


Preheat the oven to 400. Line a baking sheet with parchment paper or foil for easy clean-up. In a small bowl, mix the olive oil, garlic and Italian seasoning. Place the veggies in a bigger bowl and pour the olive oil mixture over them and stir well to coat. Place them on the baking sheet in an even layer. Salt and pepper to taste then sprinkle the cheese on evenly. Cook at 400 for about 25 minutes or until the veggies are tender and the cheese is slightly browned. Delish!
