Grilled Chicken and Shrimp Fiesta Bowl


Oh man, was this good! No need to go out to your favorite Mexican restaurant when you can make this in a flash! Your crew will love it! You can use frozen grilled chicken strips and frozen cooked shrimp for an even speedier version!


Here‘s what you need: (4-5 servings)


4 boneless, skinless chicken breasts GRILLED and thinly sliced

1 lb medium shrimp, peeled and deveined and tails removed

1 green bell pepper, seeded and chopped

1 red bell pepper, seeded and chopped

1 onion sliced

1 package fajita seasoning

1 T olive oil

1 cup shredded Monterey Jack cheese

Cooked rice to serve it with


Prepare your chicken. Rinse, drain and pat the shrimp dry with a paper towel. Heat the oil in a large skillet. Add the onion amd peppers. saute for a minute until they begin to soften. Add the grilled chicken strips and stir well. Add the fajita mix and stir to coat. Lastly stir in the shrimp and cook until the shrimp is cooked through and pink. Top with the cheese and allow to melt. Serve over rice. Enjoy!
