Grilled Chicken Burrito Bowls


Oh man! You are going to love these hearty and delicious grilled chicken burrito bowls! I made an easy seasoning mix for the chicken as well as an easy homemade salsa and it was so good! You’ll be able to put these together quickly and the whole family will thank you!

Here‘s what you need: (4 bowls)

4 chicken breast cutlets

1-2 T olive oil

Seasoning mix for chicken:

1 t paprika

1 t cumin

1/2 t chili powder

1/2 t salt

1/4 t black pepper

Salsa ingredients:

2 Roma tomatoes chopped

1/2 jalapeño, seeded and minced

1 T cilantro chopped

1/4 cup red onion, chopped

2 T red wine vinegar

Juice of one lime

Pinch of salt


1 can whole kernel corn drained and warmed up

1 can black beans rinsed, drained and warmed up

2 cups cooked brown rice or riced cauliflower

2 cups shredded lettuce

1 avocado chopped

garnishes: sour cream, shredded cheddar cheese, cilantro, lime wedges


Prepare salsa by mixing all salsa ingredients and allow to sit at room temperature while you prepare the chicken. Brush each piece of chicken with the olive oil. Mix all of the seasoning mix ingredients together in a small bowl, and sprinkle evenly on both sides of each piece. Preheat the grill to medium high heat and grill chicken until it reaches an internal temperature of 165. Chop chicken. Assemble bowls by first placing the rice evenly in each bowl. Evenly add the lettuce, corn, chicken, beans, avocado, and salsa to each bowl. Top with garnishes. Enjoy!
