Grilled Chili Lime Chicken



It’s summertime! Well, maybe not officially but it sure felt like it today! Time to fire up the grill! Try this simple and oh so good Chili Lime ChIcken. You can use 2-4 chicken breasts depending on the size. Make sure you pound them out thin. They grill up faster and soak up the marinade quicker. You don‘t need to marinate these very long at all; only 15-30 minutes and they are ready to grill! Drizzle them with a honey lime glaze right before serving and it is delish!

Here’s what you need:

2-4 chicken breasts, depending on the size, pounded out thin

zest of one lime

juice of one lime

2 t minced garlic

1 t chili powder

1/4 t salt

dash black pepper


Glaze:

juice of one lime

1-2 T honey, depending on how sweet you want your glaze


Place chicken breasts in a baking dish. Mix the next 6 ingredients together and pour over the chicken, flipping to coat both sides. Allow this to marinate for 15-30 minutes. Preheat the grill to medium high heat. When the chicken is ready, grill until it reaches an internal temperature of 165. Mix the two glaze ingredients together and drizzle over the warm chicken. Serve immediately. Yum! Serve with extra lime wedges.
