Grilled Veggie and Hummus Wraps


These grilled veggie and hummus wraps are fresh, light and packed with flavor! There’s no need for meat, but you can always add grilled chicken strips if you want! These are great for lunch or a light dinner.


Here’s what you need: (4 servings)


4 whole wheat flatbreads or tortillas

1 red bell pepper, seeded and quartered

4 slices red onion, 1/2 in thick

1 medium zucchini sliced, 1/2 in thick

1 T olive oil

salt to taste

8 oz plain hummus

1/2 cup feta cheese crumbles

4 pieces of leaf lettuce, chopped


Preheat the grill to medium high heat. Brush the vegetables with the olive oil and salt to taste. Place the vegetables on a grill pan and put it on the grill. Cook the veggies about 3 minutes per side. Remove the vegetables from the grill and chop them. Spread 1/4 cup hummus on each flatbread or tortilla, leaving a 1/2 inch border around the edges. Evenly distribute the lettuce on each flatbread. Next evenly distribute the grilled veggies on each. Sprinkle about 2 T of feta on each. Roll up each wrap and slice each one in two. Enjoy!
