Healthy Chicken Fried Rice


I just love fried rice! I wanted to try making a healthier version of this classic using brown rice and adding in some extra veggies. It was delicious and it got my family’s approval!

Here’s what you need:

1 T olive oil, divided

3 eggs , beaten

5-6 green onions, sliced

1/2 cup shredded or julienned carrot

1/2 cup frozen green peas

2 cups cooked brown rice

3 T lower sodium soy sauce

1 t rice vinegar

1 t toasted sesame oil

1/2 t grated ginger

2 cups of shredded cooked chicken ( I used a rotisserie chicken from the grocery)


In a large skillet, heat 1/2 of the olive oil. Cook the eggs in the oil . Remove when cooked and cut up in small pieces. Set this aside. Heat the remaining oil in the skillet. Sauté the green onion and carrot until softened. Add in the frozen peas. Sauté a couple minutes or so. Add the cooked rice, add the egg back in and all the remaining ingredients. Stir well. Cook on low to medium heat about five minutes to heat everything well. Adjust to taste with a pinch of salt and black pepper if needed. Enjoy!
