Honey Apple Chicken Salad


Talk about a good lunch! Try making up some of this delicious and healthy chicken salad ! Simple and so yummy! I used a Honey Crisp apple but any red apple will work. Whisk together a simple dressing and you have a fantastic salad! I used a rotisserie chicken from the grocery to make it really easy!

Here’s what you need:

2 cups cooked chicken, cubed

1 red apple, small dice ( I used Honey Crisp)

1/2 cup sliced or chopped almonds

1/4 cup chopped celery (optional)


Dressing:

1/4 cup honey

1/2 cup plain Greek yogurt

1/8 t onion powder

pinch of salt


Whisk together the ingredients for the dressing. Combine the apple, chicken, celery and almonds in a bowl. Pour dressing over the salad and stir to mix well. Chill for a while ( at least 30 minutes ) before serving. Serve on a bed of lettuce or on a sandwich. Yummy!
