Honey Garlic Chicken


I made this sweet and tangy chicken today for our Sunday dinner. I want to share this one with you, not only because it was juicy and delicious, but because it was simple and it was prepared in the oven...easy and tasty! To make things even better, by using chicken legs, thighs, or in this case, leg quarters...this dish is very economical! I used leg and thigh quarters, because we really like them! You probably have most of the ingredients needed for this on hand, so I hope you will make this one night this week!


Here's what you need: (to serve 4)

4-6 leg and thigh quarters ( or 8 legs)

1/2 cup soy sauce

3 garlic cloves, minced

3 T honey

1 T olive oil

1 or 2 t fresh chili paste ( Sambal Oelek)


Preheat the oven to 425. Spray a baking sheet or a shallow baking dish with cooking spray. Mix the soy sauce, garlic, honey, oil, and chili paste (1-2 t depending on how spicy you want it) together in a bowl. Pat the chicken pieces dry. Generously brush on the sauce on each piece of chicken and lay them skin side down in the baking dish. Bake in the oven for 30 minutes. After 30 minutes, turn the chicken over and baste the top side generously with the sauce. Cook about 10 more minutes, until the internal temperature is 165. Now turn the oven to broil on high and broil just for about 1-2 minutes just to caramelize the sauce. Enjoy this easy and delicious dinner!
