Honey Mustard Chicken


This honey mustard chicken was fantastic! As I post this, as you all know, we are all at home as we are socially distancing ourselves due to the corona virus pandemic. Like you, I am making good use of ingredients I have at home to create delicious meals for my family. I want to share this yummy one, and I am sure you probably have most of what you need already at home. You just need chicken breasts, some dijon and some whole grain (or stone ground) mustard, honey and a little butter. This was so good and the boys approved!


Here's what you need:

4 (6 oz) boneless skinless chicken breasts, or about 1 1/2 lb

2 t olive oil

salt and pepper to taste

2 T dijon mustard

1/4 cup whole grain, or stone ground mustard

5 T honey

3 T melted butter

cooking spray


Preheat the oven to 375. Heat the oil in a skillet or pan over high heat. Season the chicken with salt and pepper to taste. Brown the chicken in the pan on both sides until golden brown. Whisk the mustards, honey and butter together. Spray a rectangular baking dish with cooking spray. Spread half of the honey mustard mixture on the bottom of the pan. Lay the chicken in the baking dish on top of the sauce. Then drizzle the remaining sauce on top of the chicken. Cover with foil and bake for 20 minutes. Then uncover and bake 10 more minutes or until the chicken reaches an internal temperature of 165. . Serve with your choice of sides. Enjoy!
