Instant Pot Honey Sesame Chicken

Updated: Mar 11

What a great weeknight dinner idea! So easy and fast! On top of that, it was so tasty! Just toss a few ingredients in your Instant Pot and it will be ready to serve up in no time! Serve this with your choice of rice, and it will be sure to please the whole family!

Here's what you need:

4-5 boneless, skinless chicken breasts, cut into one inch pieces

Black pepper to taste

1 small onion, diced

3 garlic cloves, minced

1 T olive oil

1/2 cup lower sodium soy sauce

1/4 cup ketchup

1/4 t red pepper flakes

1/2 cup honey

2 t sesame oil

2 T cornstarch

sliced green onion and sesame seeds to garnish

Set the Instant Pot to saute. Add the olive oil, chicken, black pepper to taste, onion, and garlic. Saute until the onions are soft, about three minutes. Cancel saute and close the lid of the Instant Pot. Set it to pressure and set timer to three minutes. When the three minutes are up, release the pressure. Stir in the honey, ketchup, soy sauce and sesame oil, and red pepper flakes. Mix the cornstarch with three tablespoons of water. Stir the cornstarch mixture in to thicken the sauce Add salt to taste if necessary.. Serve with your choice of rice or riced cauliflower. Top with toasted sesame seeds and sliced green onion. (You will note in the picture that I was out of sesame seeds! Ha! But it was delicious anyway!) Enjoy!
