Instant Pot Lemon Garlic Chicken


The only way I can describe this chicken is melt in your mouth delicious! I made this in the Instant Pot and it was absolutely wonderful! Brown the chicken first, then make a quick lemony, garlicky sauce..it cooks for 7 minutes.. perfect!


Here’s what you need:

8-10 boneles, skinless chicken thighs

Salt and pepper to taste

1/2 t garlic powder

1/2 t smoked paprika

1 T olive oil

2 T butter or ghee

1/2 onion, chopped

4 cloves garlic, minced

Juice of one lemon

1/2 cup chicken broth

Zest of one lemon

1 T Italian seasoning

2 T heavy cream or coconut cream

1/2 t cornstarch

lemon slices and fresh parsley to garnish


Season the chicken with the salt, pepper, garlic powder, and smoked paprika on all sides.

Set the Instant Pot to Sauté. Add the olive oil. Brown the chicken on both sides about 3 minutes per side then remove the chicken with tongs and set aside. In the Instant Pot add the butter. Sauté the onion and garlic a minute or two, then add the lemon juice, lemon zest, Italian seasoning and broth to deglaze the pan. Stir well and add the chicken back in. Set the Instant Pot to pressure cook and set timer to 7 minutes.

When the time is up, manually release the pressure and remove the chicken and place in a long baking dish.

Set the Instant Pot to sauté and add in the cream mixed with the cornstarch. Stir till it bubbles and thickens slightly. Pour the sauce over the chicken . Garnish with the lemon slices and fresh parsley. Yum!
