Instant Pot Mozzarella Chicken


Yum! That is all I can say about this super-fast, super-simple weeknight dinner idea! Made in the Instant Pot in 12 minutes, this is perfect for a night when you need to get dinner on the table fast! Make it your own...I put fresh zucchini and mushrooms in the sauce, but you can also keep it plain. This is a family friendly meal I know you will love!


Here's what you need:

4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness

1 T olive oil

salt and pepper to taste

1 1/2 T Italian seasoning

1 t minced garlic

1 jar of your favorite pasta sauce

About one cup shedded mozarella cheese

Grated parmesan to taste

Optional: 1 zucchini, quartered and sliced, and 8 oz sliced mushrooms

Your choice of pasta, zucchini noodles or spaghetti squash to serve.


Set the Instant Pot to saute mode. Heat the oil in it, and saute the garlic for a minute or so. Lay the chicken breasts in the Instant Pot and sprinkle both sides with salt and pepper to taste, and the Italian seasoning. Brown the chicken on both sides just a minute or so per side. Pour the sauce over the chicken. Add the sliced veggies if you are including them. Now shut the lid and set the Instant Pot to pressure cook. Set the timer for 12 minutes

When it is finished, do a quick release. Remove the chicken breasts and place them in a baking dish. Sprinkle with parmesan to taste and top with the mozzarella. Place the chicken in the oven under the broiler just for a minute or two to melt the cheese. Don't let it burn! Serve the chicken with the sauce on your choice of pasta, zucchini noodles, or spaghetti squash. Delish!
